CHOCOLATE HONEYCOMB CUPCAKES (vegan)

Every time I tweak my vegan cupcake recipe I think it’s my best one ever, so there have been quite  few declarations of “No, this is definitely my final cupcake recipe!” throughout the past few months. However, I feel quite confident saying that this chocolate cupcake recipe is now my go-to one, and I finally feel like it doesn’t need any further changes. It originally came about as a modified version of my mini three tier cherry chocolate cake recipe, and I’ve used it to make many a birthday cupcake since, so I thought it was about time it appeared on the blog. The addition of vanilla icing and vegan honeycomb pieces make these chocolate honeycomb cupcakes an extremely indulgent and tasty treat!

VEGAN RICOTTA AND SUNDRIED TOMATO RAVIOLI (vegan)

Vegan friendly pasta is readily available at supermarkets as long as you stick to dry pasta. However, for those wanting to branch out a bit from the standard fusilli or penne, finding vegan ravioli is a lot more challenging. Ravioli pasta is usually made with egg, and the vegetarian versions pretty much always contain cheese. With this in mind, once I’d perfected my vegan ricotta cheese recipe, the next recipe I began working on was a vegan ravioli recipe that would use the ricotta cheese. I used aquafaba to replace the egg and found that pasta is surprisingly easy to make – even without a pasta machine! The intense flavour of the sundried tomato in this ravioli means that you only need to serve the pasta with a bit of olive oil or vegan butter rather than loading on a flavour-heavy sauce.

SEITAN AND SUNDRIED TOMATO BITES WITH ROASTED GARLIC DIP (vegan)

This is my second seitan recipe (my first was my vegan ‘pork’ and apple sausage rolls recipe) and it was one that I knew would be a hit as soon as I took my first taste! I originally tested the seitan recipe by making ten bites, and once I’d tried one immediately went back into the kitchen to make another twenty to take to a birthday gathering the next day. They went down well with omnis, veggies and vegans alike, so all in all I’d say that’s a good measure of success! The creamy roasted garlic dip really complements the flavour of the sundried tomato in the bites, but if you don’t have any garlic to hand these would also pair beautifully with some vegan mayonnaise.

PISTACHIO CHOCOLATE COOKIE BITES (vegan)

The natural sweetness of pistachio pairs really well with the slight bitterness of dark chocolate. For a while I had been testing recipes that combined these two flavours, but none of them were quite right until I tried this one. Don’t make the error I made – you can buy pistachios that are already shelled and skinned. I didn’t realise this until I’d tested the recipe several times and spent too many hours of my life shelling and skinning pistachios!

CHOCOLATE ORANGE BROWNIES (vegan)

Ingredients

For the caramelised orange slices:
1 orange
1/2 cup sugar

For the brownies:
2 cups flour
1/2 cup cocoa powder
1 cup brown sugar
1 cup white sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons aquafaba*
3/4 cup vegetable oil
3/4 cup + 2 tablespoons soy milk
Zest of 2 oranges
1/3-1/2 cup chocolate chips

*Aquafaba is the liquid from a can of chickpeas.

BEER BATTERED TOFISH WITH LEMON MAYO (vegan)

Ingredients

For the lemon mayo:
3 tablespoons aquafaba*
2 tablespoons lemon juice
1 teaspoon mustard
1 teaspoon apple cider vinegar
1/2 cup + 3 tablespoons vegetable oil
Zest of 1 lemon

For the tofish:
1 block of tofu
3 tablespoons aquafaba*
2 nori sheets
140g flour
200ml (vegan!) beer
Salt and pepper
2-3 cups vegetable oil

*Aquafaba is the liquid from a can of chickpeas

VEGAN FISHCAKES WITH LEMON SOUR CREAM (vegan)

Ingredients

For the ‘fish’cakes:
1 pack firm tofu (crumbled)
2 nori sheets (crumbled)
2 spring onions (finely chopped)
1 red chilli (finely chopped)
1 cup aquafaba
1 cup flour
1 cup breadcrumbs
2 tablespoons dried herbs
Salt and pepper
1 tablespoon olive oil

For the lemon sour cream:
1 pack silken tofu
1 teaspoon maple syrup
1 tablespoon olive oil
Zest of 1 lemon
4 tablespoons lemon juice
Pinch of salt
