CHUNKY WHITE CHOCOLATE AND CRANBERRY COOKIES (vegan)

Ingredients:

300g plain flour
150g caster sugar
1 teaspoon baking powder
Pinch of salt
150g vegan butter (melted)
3 tablespoons aquafaba*
50g dried cranberries
100g vegan white chocolate (chopped/ crushed into small pieces)

*Aquafaba is the liquid from a can of chickpeas.

Makes: 15 cookies

Method

1. Mix together the dry ingredients in a large bowl. Add the cranberries and vegan white chocolate and mix to combine.

2. Pour in the butter and aquafaba and mix to form a dough.

3. Take approximately a tablespoon of the dough and form a ball. Place onto a lined baking tray and press down with a fork to create a cookie shape. Repeat this with the rest of the dough.

4. Bake at 180 degrees celcius for 15-20 minutes.
