Ingredients:

3/4 cup vital wheat gluten
1/2 cup vegetable stock
1/4 cup nutritional yeast
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon pepper
Dash of oil
1 tablespoon wholegrain mustard
1/2 a red apple (peeled and chopped into small pieces)
1 pack puff pastry
4 tablespoons aquafaba* (or sub melted vegan butter or soy milk)

Ingredients

For the marshmallow topping:
1/3 cup aquafaba*
1/3 cup icing sugar
2 teaspoons vanilla extract

For the latte:
2 cups soy milk
1/3 cup pumpkin puree
1 tablespoon brown sugar
1/2 teaspoon ground all spice
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1 cup coffee

Extras (optional):
1 cinnamon stick
1/2 teaspoon grated nutmeg

50ml vegetable oil
50ml soy milk

For the pumpkin filling:
1 cup pumpkin puree
1/4 cup caster sugar
1/2 teaspoon ground all spice

For the icing:
25g vegan butter
60g vegan cream cheese
300g icing sugar
1 teaspoon vanilla extract
